This book explains how to operate each one, the advantages of each, and how to cook using either. Great recipes are also provided and demonstrate the versatility of this cooking method. What a great book! Not only is pressure cooking carefully explained, Tom Lacalamita offers up plenty of wonderful recipes that are accessible, easy to follow, and delicious. And since this book is crafted "for dummies," there are plenty of sidebar discussions that illustrate the proper way to slice vegetables and other kitchen prep tasks. I purchased this book after receiving a digital pressure cooker for Christmas, and I must say that "Pressure Cooking for Dummies" has been invaluable in my appreciation of this method of cooking!
